Let Them Eat Cake


This past weekend, Jack and I were able to go to Utah for my sister’s wedding. We spent all day Saturday making her cake. I love making cakes, but I was so nervous because I hadn’t made a cake in a long time not to mention that I have never made a wedding cake.

I made my favorite moist chocolate cake with a chocolate cream cheese frosting and it was to die for! It was so rich but just bitter enough to achieve the perfect balance. Since we were in Utah, the cooling process was rather quick considering that we just set the cakes out into the snow for 15 minutes.

Everything was going really well until around 10:30 p.m. I had both of the bottom tiers covered in fondant and ready to decorate. I just covered the top tier and it was totally lopsided and uneven. So we planned to start all over. More cake was in the oven and then out to the snow. Around 12:00 a.m. we decided to sculpt the first top tier and try to make it right.  Somehow, my mom worked her magic and made it perfect! I finished decorating the cakes around 1:00 a.m. and went right to sleep after an exhausting day of baking, decorating and making a gigantic mess.

The next day was the wedding and I was helping my sister get ready while Jack went to go set up the reception hall. After we arrived at the beautiful venue, I put together the cake and it was gorgeous! It was exactly what Jana wanted and it matched the decorations perfectly. The wedding was beautiful and my sister looked so happy with her new husband, Nathan. January weddings are just so gorgeous with the snow all around, but I may be bias ;).
