Chewy Snickerdoodles

Snickerdoodles are by far my favorite cookie, but so many times they can be dry and too crunchy. Not these babies! They are perfectly chewy and so soft. I took them to church this week and a couple of Jack’s boys came up to me after church and asked for some leftovers. One of them commented, “THEY’RE CHEWY! And they taste like cinnamon sugar.” I’ll take that as a compliment.

Snickerdoodles

  • 1/2 cup of butter (1 stick) softened
  • 1/2 cup of sugar
  • 1/3 cup of brown sugar
  • 1 egg
  • 1/2 tsp of vanilla
  • 1 1/2 cups of flour
  • 1/4 tsp of salt
  • 1/2 tsp pf baking soda
  • 1/4 tsp of cream of tartar

For Rolling

  • 2 TBS of sugar
  • 1 tsp of cinnamon

Preheat oven to 300 degrees. Cream together butter, sugar, egg and vanilla. Mix dry ingredients in a separate bowl. Slowly add dry ingredients to the wet and mix throughly. Scoop the dough into about 1 and 1/2 inch balls and refrigerate for 30 minutes. After they are chilled, roll them into the cinnamon sugar mixture. Bake for 12-14 minutes. The cookies will be dome like when they come out of the oven. They will fall flat once they have cooled down. Enjoy!
