So lets be honest here, I didn’t take this beautiful picture. BUT I have an explanation. My husband and I love these pancakes so much that they didn’t spend much time in a pretty little stack. And, I finished making these 5 minutes before the finale of The Bachelorette and I couldn’t miss that for pancake pictures… I know it’s a poor excuse, but it doesn’t really matter because these pancakes are literally perfect!
Jack and I love breakfast food! We went to IHOP the morning after our wedding and we go for date night all of the time! But, when we don’t have money and we are looking for a cheap dinner, we always turn to homemade breakfast food! And these pancakes are our new favorite! They are so fluffy and have the most delicate crisp on the outside. It makes about a half dozen 6-7 inch pancakes.
- 1 1/4 cups of flour
- 1/4 cup of sugar
- 1 heaping tsp of baking soda
- 1 heaping tsp of baking powder
- pinch of salt
- 1 1/4 cups of buttermilk
- 1 egg
- 1/4 cup oil
Whisk together all of the dry ingredients, then add in the wet ingredients. The batter will be a little thicker consistency than normal pancakes.
Heat pan to medium low, slow and low is the key for light fluffy pancakes with a crisp outer layer. Place about 1/2 cup to 2/3 cup of batter in the warm pan. Flip when the pancake starts turning that beautiful crisp golden color. And the rest is up to you! Butter syrup, strawberries, peaches, bananas, whipped cream, or even ice cream! Make it how you like it!
