Not Your Momma’s Chocolate Box Cake


You know how every chocolate cake you have ever had is disgustingly dry and not as satisfying as you had hoped? Well, this cake is far beyond the opposite of the cake you just imagined eating. This cake is the more moist chocolate cake I have ever had and I would choose it over a box mix any day! It has the true bitter cocoa taste that a good chocolate cake is supposed to have and it is to die for.

Chocolate Cake

  • 3 cups of all-purpose flour
  • 2 cups of granulated sugar
  • 2 tsp of baking soda
  • 2 tsp of salt
  • 2/3 cup of unsweetened cocoa powder
  • 1 cup of canola oil
  • 2 cups of water
  • 2 tsp of vanilla extract
  • 2 TBS of apple cider vinegar

Chocolate Fudge Icing

  • 1/4 cup of unsalted butter
  • 4 TBS of unsweetened cocoa powder
  • 3 TBS of greek yogurt
  • 1 1/2 cups of powdered sugar
  • 1/2 tsp of vanilla extract

Preheat your oven to 350 degrees. Mix all wet ingredients and slowly sift in the dry. The batter will be very runny! And as you’re double checking yourself to make sure you didn’t forget any ingredients you will remember that you didn’t put in any eggs. Stop yourself before you whip those eggs in! That’s right, there are no eggs in this cake! Poor your very runny batter into a 9 x 13 greased pan. Cook for 45-50 minutes.

For the icing, melt butter over low heat and whisk in other ingredients. Do not overcook! There is nothing worst than a house that smells like burnt sugar! Glaze over individual pieces of cooled cake and enjoy!
