Vinegar Potato Slices

I am absolutely addicted to the Salt and Vinegar Pringles chips but they are just extra money that I don’t really need to spend each grocery shopping trip. So, I had the brilliant idea to make my own various! Now, they aren’t quite the same because I don’t have a mandolin to slice my potatoes thin enough, but they are still delicious!

Vinegar Potato Slices

  • 1-3 Peeled Potatoes (cut into 1/4 inch slices)
  • 1 cup of Vinegar
  • 1/4 Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper

First, boil your potato slices in the vinegar until they are fork tender. (Add a little water for a toned down taste). Next toss the boiled potato slices in olive oil and cover generously with salt and pepper. Lay out slices in a single layer on a cookie sheet and broil on high until golden brown. Serve with fresh rosemary for that beautiful gourmet culinary look! Enjoy!
